There are so many things I like about the Air Fryer. But the way it can take fairly ordinary ingredients and turn them into a quick meal is one of my top reasons for being an Air Fryer fan. And this new recipe for Air Fryer Sausage and Peppers was absolutely delicious, and extra simple to prepare for a week-night dinner.

In fact, I liked this sausage and peppers dinner idea so much that after we tested the recipe a week later I made it for myself and ate the leftovers for several days in a row! And that’s something that doesn’t happen often in a house where there’s always a lot of food around from testing recipes. I think this is especially good in the fall when bell peppers are so tasty, and large, thicker-fleshed peppers are best for this.

Kara and I both like our sausage well-browned, so we put the Air Fryer rack on the top in the Cuisinart Convection Air Fryer Toaster Oven (affiliate link) that I keep out on my countertop, but if you’d like your sausage a bit less browned just use the lower shelf. And all Air Fryer brands cook slightly different, so I would start checking a minute sooner than the cooking time for each step of this recipe.

My fondness for Italian Sausage with peppers is pretty well-documented on this site, but I can guarantee this is a recipe that will definitely be a regular for me. If you like those ingredients too, I hope you’ll give it a try.

Should you use hot or mild Italian Sausage?

Either hot Italian sausage or mild Italian sausage will be delicious in this easy dinner, so use whichever one your family prefers.

Can you use other colors of bell peppers for this recipe?

You can definitely use yellow, orange, or even green bell peppers if that’s what you have, but I used the extra-large red bell peppers that show up in the fall, and they were on sale at my store!

What if you don’t like onion?

We liked the bit of onion in this dish, but the onion is completely optional, so if you don’t like onion feel free to leave it out. If your peppers aren’t quite large, I might use one more pepper if you’re leaving out the onion.

Which Air Fryer do I use?

I became a big Air Fryer fan after I discovered the Cuisinart Convection Air Fryer Toaster Oven (affiliate link) which is what I used for this recipe. This air fryer has a larger basket, which let me fit enough sausage and peppers for five servings for this recipe. I also like the convenience of having an air fryer that stays out on the counter.

What if you don’t have an Air Fryer?

I haven’t tried making this exact same recipe in the oven, but Italian Sausage and Sweet Mini Peppers Sheet Pan Meal should be helpful for people who want to try that.

How to make Air Fryer Sausage and Peppers:

  1. Cut up peppers and onions into thick strips.
  2. Mix together the dressing, Italian Herb Seasoning, and Dried Oregano.
  3. Toss onions and peppers with dressing mixture.
  4. We used a piece of Air Fryer Parchment Paper (affiliate link) but that’s completely optional.
  5. Preheat Air Fryer to 400F/200C if your Air Fryer model needs it.
  6. Put veggie mixture into Air Fryer basket and cook 5 minutes.
  7. We rolled the sausage on the cutting board to straighten it. (Not absolutely necessary, but this makes it easier to fit five pieces of sausage!)
  8. After 5 minutes, remove Air Fryer basket and stir vegetables.
  9. Put sausage links on top of the vegetables and cook 5 minutes more.
  10. Remove Air Fryer basket again, stir veggies again, and turn over sausage and put back on top of the peppers.
  11. Cook 3-5 minutes longer, or until the sausage is browned and cooked through.
  12. We used an Instant Read Meat Thermometer (affiliate link) to make sure the sausage was 160F/71C for pork sausage or 165F/74C for turkey sausage.
  13. Serve hot and enjoy!

Low-Carb Diet / Low-Glycemic Diet / South Beach Diet Suggestions:
Air Fryer Sausage and Peppers should be a good dinner for low-carb or Keto diet plans. Personally I would eat this for any phase of the original South Beach Diet, but South Beach would definitely recommend turkey Italian sausage, which I am having a hard time finding lately. (The fat content in the nutritional information is for pork sausage, so it would be quite a bit lower in fat with the turkey sausage.)
